Cheesy Spaghetti Squash

Ingredients:

spaghetti squash
3 Pound
Parmesan cheese
1/2 Cups
grated
mozzarella cheese
1/2 Cups
Tomatoes
2
chopped
parsley
1/4 Cups
fresh
Ground Turkey
1 Pound
Tomato sauce
2 Cups

Preparation mode:

1. Pierce a large spaghetti squash several times with a fork to allow steam to escape. Microwave on high for 10 minutes, or until just soft, turning over after 5 minutes. Let stand for 5 minutes.

2. Cut squash in half. Remove and discard seeds. Use a fork to scrape the insides of the squash to form strands; reserve one squash shell. Toss strands with parmesan, mozzarella, tomatoes and
fresh parsley.

3. Spoon squash back into shell and microwave on high for 2 minutes to heat through.

4. Cook ground turkey in a skillet until gold; add tomatoes and tomato sauce.

5. Place shells in a 13- x 9-inch pan. Sprinkle with cheese. Broil 4 inches from heat (with electric oven door partially open) 3 minutes or until lightly browned. Serve warm or at room temperature.
