Easy Almond Butter Mini Cakes

Ingredients:

Egg

Almond Flour
1/2 Cups
Almond Butter
1/4 Cups
Swerve, Confectioners
1/3 Cups

Preparation mode:

1. Mix the egg, flour, almond butter, baking soda, and Swerve in a large bowl. Use an electric mixer, until a smooth consistency is obtained. Pour this mixture evenly into ramekins.

2. Pour 1 cup of filtered water into the Instant Pot, then insert the trivet. Working in batches if needed, cover the ramekins with aluminum foil, and place on top of the trivet. Close the lid, set the pressure release to Sealing, and select Manual/Pressure Cook. Set the Instant Pot to 30 minutes on high pressure and let cook.

3. Once cooked, let the pressure naturally disperse, the remove the mini cakes, and let cool. If desired, brown cakes in oven at 350°F for 2 to 3 minutes, to finish.
