Keto Greek Frittata

Ingredients:

Baby spinach
5 Ounces
Fetta cheese
4 Ounces
garlic
2
cloves
red onion
1
medium
black pepper
olive oil
oregano
salt
eggs

grape tomatoes

Preparation mode:




1. Wash and dry spinach and tomatoes.

2. Heat a skillet.

3. Peel and medium dice onion and mince garlic.

4. Coat bottom of skillet with oil. Add onion, cook until softened, 3 to 4 minutes.

5. In a bowl, whisk together eggs, oregano, salt and pepper.

6. Preheat oven to broil and position rack about 4 inches from the top.

7. Add garlic and tomatoes to skillet. Stir to combine and cook for 1-2 minutes.

8. Add spinach and stir to combine.

9. Spread all ingredients evenly in the skillet and pour the egges. Cook until bottom and sides are firm but the top is still runny, 5-7 minutes.

10. Spriklefeta over top. PLace skillet in the oven under the broiler until the top is set  – about 2-3 minutes.

11. Cut into wedges and enjoy!
