Lobster Bisque

Ingredients:

Lobster Tails

Grass-feed Bone Broth
3 Cups
Canned, Sugar-free diced Tomatoes
3 Cups
Old bay seasoning
2 Tablespoons
Garlic cloved, crushed

1 Teaspoons
Hot sauce
1 Teaspoons
Paprika Fresh
1/2 Teaspoons
Kosher Salt
1/2 Teaspoons
Freshly Ground Black Pepper
1/2 Teaspoons
Heavy Whipping Cream
2 Cups

Preparation mode:

1. Remove lobster meat from shells, roughly chop, and refrigerate (covered). Place the shells in the Instant Pot, then add bone broth tomatoes, old bay, garlic, thyme, hot sauce, paprika, salt and pepper.

2. Close the lid, set the pressure release to sealing, and select manual/pressure cook. Set the Instant Pot to 4 minutes on high pressure and let cook.

3. Once cooked, perform a quick release. Using tongs, remove and throw away the shells. Set the Instant Pot to keep warm mode. Mix in whipping cream, then puree with an immersion blender, until obtaining a smooth consistency.

4. Once done, stir in lobster tails, return lid, and seal the valve. Cook on Manual/Pressure Cook again for 3 minutes (or until desired tenderness and consistency). Perform a quick release by carefully switching the pressure valve to Venting.
