Poached Salmon with Artichokes

Ingredients:

Wild Atlantic Salmon
6 Ounces

Salt

White Wine
1/4 Cups
Shallots
3/4 Tablespoons
Raw
Black Pepper

Artichokes

Butter
1 Tablespoons
Garlic

Preparation mode:

Salmon
1. Sprinkle the salmon fillets with a little salt. Put the wine, water, dill, parsley and onions in a saut pan, and bring to a simmer on medium heat.
2. Place salmon fillets, skin-side down on the pan. Cover. Cook 5 to 10 minutes, depending on the thickness of the fillet, or to desired done-ness. Do not overcook. Serve sprinkled with freshly ground black pepper.
Artichoke
1. Fill the pan with just enough water to cover bottom. Bring to a full boil over high heat. While water is heating, trim and discard the stems and tough outer leaves of artichokes. Tuck slivers of butter and slices of garlic into artichoke leaves.
2. When water is boiling, place steamer insert in pot and set artichokes in steamer, stem-side down. Cover pot with lid and allow artichokes to steam for approximately 20 minutes, until tender.
