Zucchini Egg Cups

Ingredients:

Zucchini
1
Ham
1/4 Pounds
Cherry Tomatoes
1/2 Cups
Eggs
8
Heavy Cream
1/2 Cups
Salt and Pepper
Oregano
1/2 Teaspoons
Shredded Cheddar
1 Cups
Olive Oil
1 Tablespoons

Preparation mode:

1. Create Zucchini strips, slice the ham and tomatoes.

2. In a medium bowl, whisk together eggs, heavy cream, oregano then season with salt and pepper.

3. Preheat oven to 400°F and grease a muffin tin with olive oil, line the inside and bottom of the muffin tin with  Zucchini strips, to form a crust. Sprinkle ham and cherry tomatoes inside each crust.

4. Pour egg mixture over ham and tomatoes then top with cheese. Bake until eggs are set, 30 minutes.
